Jed Buchwald on Savories, Coblenz and Economisers

Jed Buchwald, author of Savories: Engaging the Modern Eater from City to Field to Table (Bloomsbury, 2017), joins Lexman to talk about his latest book, savories, and the new approach that he takes with cooking. Jed talks about his love for farm-to-table cooking and the importance of saving money by cooking with less expensive ingredients. He also talks about his new cookbook, Coblenz: Stories from the German Cuisine of the Weimar Republic (Ten Speed Press, 2019), which tells the stories of some of the forgotten dishes from that era.
