Lucy Loves Tor Anderson

People who know me can often be sure to find a cake on the go in my household. However, I only have a fairly small repertoire of cakes I make really well. One of which is my carrot cake. Whenever I make this particular cake, I always think of my gorgeous friend Tor Anderson, because we met over this very recipe when I attended a baking class at the Edinburgh New Town Cookery School.    Tor was one of the teachers and we had a lot of fun and we cemented our friendship over cake mixture. That was almost 10 years ago and Tor is now the event manager at the Do Lectures in Wales, the Do Lectures, is a company well worth looking up because they are such a forward-thinking company, bringing together experts, pioneers, and changemakers to encourage others to go and do. And they offer the most high-energy events that are really pretty special.
