Is turf that much different than grass?

Dorin reports that the 2026 World Cup Finals are going to be played at MetLife Stadium in New Jersey. With a sport like soccer being played mostly on grass, is MetLife's turf surface going to be removed? And is turf or grass a better surface to play on?
